Research Institute of Brewing and Malting is one
of the oldest research institutes in Europe. It was established as the Institute for
Brewing Industry in Bohemia in the autumn 1887. The Institute, whose contemporary and past
purpose are nearly the same, resided originally at Senovazne namesti (square), but has
been located at Lipova 15 (street) since 1937. This building, known as "Pivovarsky
Dum" (Brewing House) was built and financed by the association of Czech breweries to
house research and development for the brewing industry.
During the first years of its existence the
Institute dealt especially with analytical laboratory activities and the evaluation of
barley and hops, and subsequently the Institute began to act as a qualified arbitrator
on the quality of raw materials. At the end of the 19th century the Institute
cooperated with Professor Hansen from Carlsberg Brewery on introducing and using new yeast
strains. Later, the Institute also focused on studying the qualitative parameters of hops,
and after connection with the Malting Institute in Brno, research was enlarged to analyses
of barley, malt and malting technology.
The Research Institute of Brewing and Malting is
now a joint-stock company, but during the past 50 years it was part of the management
structures of the Czech brewing and malting industry. After the 'Velvet Revolution', the
Institute had to undertake its former obligations and become an independent facility.
The contemporary fundamental research project is
the specification of the character of Czech beer, especially Pilsner Urquell, with the aim to
define this beer by means of chemical and sensory analyses and the use of technology, in
order to preserve its character in changing economic and technological conditions. The
second aim is to succeed in new techniques of fermentation shortening and continuous
hopping to achieve greater economic savings in production.
The Research Institute of Brewing and
Malting joint-stock company is divided into 6 organization sections
located in the buildings of the Brewing Institute in Prague (Lipova 15,
120 44 Praha 2), Malting Institute in Brno (Mostecka 7, 614 00 Brno)and
Legislative Section (Korunni 106, 101 00 Praha 10).
The Institute is a member of Czech
Beer And Malt Association.
