Technological department

The principal task of the Technological department – Experimental and Development Center in Prague is preparation of samples of intermediates  and finished beer for implementation of research projects. These samples are prepared under a wide variety of technological conditions and using a broad range of raw materials.

The device producing these samples is a copper bench scale brewhouse outfit with a 38 l volume of the finished wort. Primary fermentation proceeds in open vessels and maturation in KEG barrels. (The highly standardized outcomes of the trials and high informative value of the results of the bench scale brews are documented by the data published in the journal Kvasný průmysl. - issue 3, 2008).

A new pilot scale brewhouse form Kaspar Schulz company (2.5-3 hl) is the state-of-the-art device. All steps in the brewing  process subject  to precise control and many parameters can be varied.

Primary fermentation can be performed in CCT or in open vats, beer maturation takes place in stainless steel lager tanks.

Other machinery includes powder and plate filtration, HGB device with dilution according to extract or alcohol concentration, and bottling under carbon dioxide and with double bottle evacuation.

The high quality equipments of the brewhouse and cold block permit the modeling of advanced technologies.

The top equipment and extensive experience of the technologists allow the Technological department to address research and development tasks, and perform a number of analyses and  technological tests  for breweries and beverage industry on a commercial basis.
